Your Summer Work-Lunch : Aubergine, Fresh Goat Cheese mint and pines
You may have noticed my love for fresh goat cheese - so creamy and sunny! Well, here is one of my favorite recipe for a nice summery meal, when the weather gets hot and you can't imagine eating anything warm. (It gets around 35-38°C in Lyon during July, so be prepared!) Mix your fresh cheese with extra virgin olive oil, a hint of honey, pines and fresh mint. Slice your aubergines as showed on the picture and leave salt on the slices for 30minutes - it will absorb the water. Then slow cook the slices in the oven for about 15min at low heat, and stuff them with cheese making small rolls!
